  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried thyme
  • 1 tablespoon rosemary
  • 2 cups beef broth
  • 4 carrots chopped
  • 4 potatoes diced
  • 1 large onion quartered

Instructions
 

  • Preheat your oven to 325°F (165°C).
  • Season the beef roast with salt, black pepper, thyme, and rosemary.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the beef roast on all sides until browned (about 3-4 minutes per side).
  • Remove the roast and place it in a roasting pan.
  • Add garlic, carrots, potatoes, and onion to the pan around the roast.
  • Pour beef broth over the vegetables and roast.
  • Cover the pan with aluminum foil or a lid.
  • Roast in the preheated oven for 2-3 hours or until the meat reaches your desired doneness.
  • Let the roast rest for 15 minutes before slicing and serving.
