Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup cream cheese for frosting
  • 2 cups powdered sugar for frosting

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract and grated carrots.
  • In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bars to cool completely in the pan.
  • For the frosting, beat cream cheese and powdered sugar until smooth, then spread over the cooled bars.
