Ingredients
  

  • 2 cups fresh or frozen cherries pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter cut into small pieces
  • 1 package pie crusts
  • 1 egg beaten (for egg wash)
  • Pinch of salt

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract.
  • Let the mixture sit for about 10 minutes.
  • Roll out one pie crust and place it in a 9-inch pie pan.
  • Pour the cherry mixture into the pie crust.
  • Dot the filling with small pieces of butter.
  • Roll out the second pie crust and cut it into strips for a lattice top.
  • Weave the strips over the cherry filling.
  • Brush the top with beaten egg and sprinkle a little sugar.
  • Bake in the preheated oven for 40-45 minutes.
