- 2 cups fresh or frozen cherries pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon butter cut into small pieces
- 1 package pie crusts
- 1 egg beaten (for egg wash)
- Pinch of salt
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract.
Let the mixture sit for about 10 minutes.
Roll out one pie crust and place it in a 9-inch pie pan.
Pour the cherry mixture into the pie crust.
Dot the filling with small pieces of butter.
Roll out the second pie crust and cut it into strips for a lattice top.
Weave the strips over the cherry filling.
Brush the top with beaten egg and sprinkle a little sugar.
Bake in the preheated oven for 40-45 minutes.
