Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup bell peppers red, green, yellow, sliced
  • 1 onion sliced
  • 2 cups shredded cheese cheddar and Monterey Jack blend
  • 1 can black beans drained and rinsed
  • 1 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat.
  • Add sliced onions and bell peppers, sauté until softened.
  • Stir in shredded chicken and black beans, along with chili powder, cumin, salt, and pepper.
  • Remove from heat and mix in salsa.
  • In a greased baking dish, layer the chicken mixture evenly.
  • Sprinkle half of the cheese over the chicken mixture.
  • Add another layer of the chicken mixture, followed by the remaining cheese.
  • Cover with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until cheese is bubbly.
