- 2 cups cooked chicken shredded
- 1 cup bell peppers red, green, yellow, sliced
- 1 onion sliced
- 2 cups shredded cheese cheddar and Monterey Jack blend
- 1 can black beans drained and rinsed
- 1 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Preheat your oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat.
Add sliced onions and bell peppers, sauté until softened.
Stir in shredded chicken and black beans, along with chili powder, cumin, salt, and pepper.
Remove from heat and mix in salsa.
In a greased baking dish, layer the chicken mixture evenly.
Sprinkle half of the cheese over the chicken mixture.
Add another layer of the chicken mixture, followed by the remaining cheese.
Cover with foil and bake for 20 minutes.
Remove the foil and bake for an additional 10 minutes until cheese is bubbly.
