- 1 lb chicken breast diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes halved
- 1 cup spinach chopped
- 1 onion chopped
- 2 cloves garlic minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until translucent.
Stir in minced garlic and cook for another minute.
Add diced chicken breast and cook until browned.
Season with salt and pepper.
Pour in the chicken broth and bring to a boil.
Stir in orzo pasta and reduce heat to low.
Add halved cherry tomatoes and chopped spinach.
Cover and simmer for 10-12 minutes until orzo is cooked.
Serve hot, garnished with fresh basil.
