Ingredients
  

  • 1 lb chicken breast diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1 cup spinach chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add diced chicken breast and cook until browned.
  • Season with salt and pepper.
  • Pour in the chicken broth and bring to a boil.
  • Stir in orzo pasta and reduce heat to low.
  • Add halved cherry tomatoes and chopped spinach.
  • Cover and simmer for 10-12 minutes until orzo is cooked.
  • Serve hot, garnished with fresh basil.
