Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • Zest of 1 lime

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • In a medium pot, heat the olive oil over medium heat.
  • Add the rinsed rice and toast for 2-3 minutes, stirring frequently.
  • Pour in the water and add salt; bring to a boil.
  • Once boiling, reduce heat to low and cover the pot.
  • Let the rice simmer for 15 minutes, or until water is absorbed.
  • Remove the pot from heat and let it sit, covered, for 5 minutes.
  • Fluff the rice with a fork, then add lime juice and zest.
  • Stir in the chopped cilantro until evenly distributed.
  • Serve warm as a side dish or as a base for your favorite meals.
