Ingredients
  

  • 4 cups fresh corn kernels or frozen
  • 2 medium potatoes diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh thyme for garnish
  • Green onions chopped for garnish

Instructions
 

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onion and minced garlic; sauté until soft.
  • Stir in the diced potatoes and cook for 5 minutes.
  • Add the corn kernels and stir well.
  • Pour in the broth and bring to a boil.
  • Reduce heat and simmer for 15 minutes, until potatoes are tender.
  • Blend the mixture until smooth, leaving some texture.
  • Stir in the heavy cream and season with salt and pepper.
  • Heat through for another 5 minutes.
  • Serve hot, garnished with thyme and green onions.
