Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup nut butter peanut or almond
  • 1/2 cup honey or maple syrup
  • 1/2 cup chocolate chips or dried fruit
  • 1/4 cup chopped nuts e.g., almonds, walnuts
  • 1/4 cup seeds e.g., chia, flax
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: shredded coconut for rolling

Instructions
 

  • In a large mixing bowl, combine rolled oats, nut butter, and honey.
  • Stir in chocolate chips and chopped nuts until evenly mixed.
  • Add seeds, vanilla extract, and a pinch of salt to the mixture.
  • Use your hands to knead the mixture until it sticks together.
  • Refrigerate the mixture for 10 minutes to firm up.
  • Scoop out tablespoon-sized portions and roll each into a ball shape.
  • If desired, roll the balls in shredded coconut for added texture.
  • Place the formed balls on a baking sheet lined with parchment paper.
  • Refrigerate for an additional 30 minutes before serving.
