Japchae is a traditional Korean dish made from sweet potato glass noodles stir-fried with vegetables and beef, seasoned with soy sauce and sesame oil.

Ingredients
  

  • 200 g sweet potato noodles
  • 100 g beef thinly sliced
  • 1 carrot julienned
  • 1 bell pepper sliced
  • 1 onion sliced
  • 2 cups spinach
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions
 

  • Soak the sweet potato noodles in warm water for about 30 minutes until softened.
  • Drain the noodles and set aside.
  • Heat vegetable oil in a large pan over medium heat.
  • Add the sliced beef and cook until browned.
  • Remove the beef from the pan and set aside.
  • In the same pan, add garlic and onion; sauté until fragrant.
  • Add carrots and bell peppers, stir-frying for 5 minutes.
  • Add the spinach and cook until wilted.
  • Return the beef to the pan, mixing well with the vegetables.
  • Add the soaked noodles, soy sauce, and sesame oil, tossing everything together for 3-4 minutes.
  • Season with salt and pepper to taste, and garnish with sesame seeds.
