Japchae is a traditional Korean dish made from sweet potato glass noodles stir-fried with vegetables and beef, seasoned with soy sauce and sesame oil.

- 200 g sweet potato noodles
- 100 g beef thinly sliced
- 1 carrot julienned
- 1 bell pepper sliced
- 1 onion sliced
- 2 cups spinach
- 3 cloves garlic minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Sesame seeds for garnish
Soak the sweet potato noodles in warm water for about 30 minutes until softened.
Drain the noodles and set aside.
Heat vegetable oil in a large pan over medium heat.
Add the sliced beef and cook until browned.
Remove the beef from the pan and set aside.
In the same pan, add garlic and onion; sauté until fragrant.
Add carrots and bell peppers, stir-frying for 5 minutes.
Add the spinach and cook until wilted.
Return the beef to the pan, mixing well with the vegetables.
Add the soaked noodles, soy sauce, and sesame oil, tossing everything together for 3-4 minutes.
Season with salt and pepper to taste, and garnish with sesame seeds.
