- 2 pounds of russet potatoes peeled and cubed
- 1/2 cup of milk
- 1/4 cup of unsalted butter
- 1 cup of shredded cheddar cheese
- 1/2 cup of cooked bacon crumbled
- 1/4 cup of green onions chopped
- Salt and pepper to taste
Place the peeled and cubed potatoes in a large pot and cover with cold water.
Bring the water to a boil over medium-high heat and add a pinch of salt.
Cook the potatoes for about 15-20 minutes, until fork-tender.
Drain the cooked potatoes and return them to the pot.
Add the butter and milk to the pot and mash the potatoes until creamy.
Stir in the shredded cheddar cheese until melted and well combined.
Fold in the crumbled bacon and green onions, reserving some for topping.
Season with salt and pepper to taste.
Transfer the mashed potatoes to a serving dish and top with additional cheese, bacon, and green onions.
