Ingredients
  

  • 2 pounds of russet potatoes peeled and cubed
  • 1/2 cup of milk
  • 1/4 cup of unsalted butter
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of cooked bacon crumbled
  • 1/4 cup of green onions chopped
  • Salt and pepper to taste

Instructions
 

  • Place the peeled and cubed potatoes in a large pot and cover with cold water.
  • Bring the water to a boil over medium-high heat and add a pinch of salt.
  • Cook the potatoes for about 15-20 minutes, until fork-tender.
  • Drain the cooked potatoes and return them to the pot.
  • Add the butter and milk to the pot and mash the potatoes until creamy.
  • Stir in the shredded cheddar cheese until melted and well combined.
  • Fold in the crumbled bacon and green onions, reserving some for topping.
  • Season with salt and pepper to taste.
  • Transfer the mashed potatoes to a serving dish and top with additional cheese, bacon, and green onions.
  • Serve hot and enjoy!
