- 4 chicken thighs bone-in, skin-on
- 2 cups cherry tomatoes halved
- 1 cup Kalamata olives pitted
- 1 red onion sliced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine cherry tomatoes, olives, red onion, and garlic.
Add olive oil, lemon juice, oregano, salt, and pepper to the vegetable mixture.
Place the chicken thighs on a baking tray.
