Ingredients
  

  • 4 chicken thighs bone-in, skin-on
  • 2 cups cherry tomatoes halved
  • 1 cup Kalamata olives pitted
  • 1 red onion sliced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine cherry tomatoes, olives, red onion, and garlic.
  • Add olive oil, lemon juice, oregano, salt, and pepper to the vegetable mixture.
  • Place the chicken thighs on a baking tray.
  • Spread the vegetable mixture around the chicken evenly.
  • Drizzle additional olive oil over the chicken for extra flavor.
  • Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • During the last 10 minutes, broil the chicken for a crispy skin.
  • Remove from the oven and let it rest for 5 minutes.
  • Garnish with fresh parsley before serving.
