Ingredients
  

  • 1 pre-made pie crust or puff pastry
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/2 cup diced vegetables
  • 1/2 cup cooked meats
  • Salt and pepper to taste
  • Fresh herbs for garnish optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Roll out the pie crust and cut into circles to fit a muffin tin.
  • Press the dough circles into the muffin tin cups.
  • In a bowl, whisk together eggs and heavy cream until well combined.
  • Add salt and pepper to the egg mixture.
  • Layer the bottom of each pastry with vegetables and meats.
  • Pour the egg mixture over the fillings, filling each cup about ¾ full.
  • Top with shredded cheese.
  • Bake for 20-25 minutes or until the egg is set and the tops are golden.
  • Allow to cool slightly before removing from the muffin tin.
