- 1 lb Italian sausage
- 1 large onion diced
- 4 cloves garlic minced
- 6 cups chicken broth
- 4 medium potatoes sliced
- 1 bunch kale chopped
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for sautéing
- Red pepper flakes optional
In a large pot, heat olive oil over medium heat.
Add the Italian sausage and cook until browned, breaking it apart as it cooks.
Remove the sausage from the pot and set aside.
In the same pot, add the diced onion and garlic; sauté until softened.
Pour in the chicken broth and bring to a boil.
Add the sliced potatoes and cook until tender, about 15 minutes.
Stir in the browned sausage and chopped kale.
Reduce heat and add the heavy cream; mix well.
Season with salt, pepper, and red pepper flakes to taste.
Allow to simmer for an additional 5 minutes before serving.
