- 100 g almond flour
- 100 g sugar
- 4 large eggs
- 40 g all-purpose flour
- 30 g melted butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- 200 g unsalted butter softened
- 200 g powdered sugar
- 2 tbsp brewed coffee
- 150 g dark chocolate chopped
- 150 ml heavy cream
Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
In a bowl, whisk together almond flour, all-purpose flour, and salt.
In a separate bowl, beat eggs and sugar until pale and fluffy.
Gently fold the dry ingredients into the egg mixture.
Add melted butter and vanilla extract, mixing until just combined.
Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
Allow the sponge to cool completely before removing it from the pan.
For the coffee buttercream, beat softened butter and powdered sugar until creamy.
Add brewed coffee and mix until well combined.
Prepare the chocolate ganache by heating the cream and pouring it over the chopped chocolate. Stir until smooth.
Assemble the cake by layering the sponge, coffee buttercream, and ganache, repeating until all components are used.
