Ingredients
  

  • 100 g almond flour
  • 100 g sugar
  • 4 large eggs
  • 40 g all-purpose flour
  • 30 g melted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 200 g unsalted butter softened
  • 200 g powdered sugar
  • 2 tbsp brewed coffee
  • 150 g dark chocolate chopped
  • 150 ml heavy cream

Instructions
 

  • Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
  • In a bowl, whisk together almond flour, all-purpose flour, and salt.
  • In a separate bowl, beat eggs and sugar until pale and fluffy.
  • Gently fold the dry ingredients into the egg mixture.
  • Add melted butter and vanilla extract, mixing until just combined.
  • Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
  • Allow the sponge to cool completely before removing it from the pan.
  • For the coffee buttercream, beat softened butter and powdered sugar until creamy.
  • Add brewed coffee and mix until well combined.
  • Prepare the chocolate ganache by heating the cream and pouring it over the chopped chocolate. Stir until smooth.
  • Assemble the cake by layering the sponge, coffee buttercream, and ganache, repeating until all components are used.
