Ingredients
  

  • 1 cup long-grain rice
  • 2 cups vegetable or chicken broth
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 bell pepper diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh herbs like parsley or dill for garnish

Instructions
 

  • Heat olive oil in a large saucepan over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add diced carrots and bell peppers; sauté for 3-4 minutes.
  • Stir in the rice, coating it with the oil and vegetables.
  • Add cumin, salt, and pepper; mix well.
  • Pour in the broth and bring to a boil.
  • Reduce heat to low, cover the pan, and simmer for about 15 minutes.
  • Remove from heat and let it sit for 5 minutes without lifting the lid.
  • Fluff the rice with a fork and garnish with fresh herbs before serving.
