  • 1 can 10 oz diced tomatoes with green chilies (Rotel)
  • 2 cups shredded cheddar cheese
  • 2 cups biscuit baking mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Optional: chopped green onions for garnish

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix the softened cream cheese and ground sausage until well combined.
  • Stir in the Rotel tomatoes, ensuring they are evenly distributed.
  • Add the shredded cheddar cheese and mix thoroughly.
  • Gradually incorporate the biscuit baking mix into the sausage mixture.
  • Season with garlic powder, onion powder, black pepper, and salt.
  • Use your hands to form the mixture into small balls, about 1 inch in diameter.
  • Place the sausage balls on a baking sheet lined with parchment paper.
