  • 2 cups shredded rotisserie chicken
  • 4 cups mixed greens spinach, arugula, romaine
  • 1 cup cherry tomatoes halved
  • 1/2 cucumber diced
  • 1/4 red onion thinly sliced
  • 1/2 avocado diced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Shred the rotisserie chicken into bite-sized pieces.
  • Wash and dry the mixed greens thoroughly.
  • In a large mixing bowl, combine the greens and shredded chicken.
  • Add the halved cherry tomatoes and diced cucumber.
  • Toss in the sliced red onion and diced avocado.

  • In a separate bowl, whisk together olive oil and balsamic vinegar.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Season with salt and pepper to taste.
