Ingredients
  

  • 4 sausages your choice: pork, chicken, or vegetarian
  • 2 cups diced potatoes
  • 1 cup chopped onions
  • 1 cup sliced carrots
  • 1 cup green beans
  • 1 can 15 oz diced tomatoes
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add diced potatoes, onions, and carrots; sauté for about 5-7 minutes.
  • Add the sausages to the skillet and brown them on all sides.
  • Stir in the green beans and cook for another 3 minutes.
  • Pour in the diced tomatoes, season with salt and pepper, and mix well.
  • Transfer the mixture to a greased baking dish.
  • Sprinkle shredded cheese evenly over the top.
  • Add breadcrumbs for a crispy topping.
  • Bake in the preheated oven for 25-30 minutes, or until golden brown.
