- 4 sausages your choice: pork, chicken, or vegetarian
- 2 cups diced potatoes
- 1 cup chopped onions
- 1 cup sliced carrots
- 1 cup green beans
- 1 can 15 oz diced tomatoes
- 1 cup shredded cheese cheddar or your choice
- 1 cup breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat.
Add diced potatoes, onions, and carrots; sauté for about 5-7 minutes.
Add the sausages to the skillet and brown them on all sides.
Stir in the green beans and cook for another 3 minutes.
Pour in the diced tomatoes, season with salt and pepper, and mix well.
Transfer the mixture to a greased baking dish.
Sprinkle shredded cheese evenly over the top.
Add breadcrumbs for a crispy topping.
Bake in the preheated oven for 25-30 minutes, or until golden brown.
