- 1 whole turkey 12-14 pounds
- 1/4 cup olive oil
- 1/4 cup smoked paprika
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon black pepper
- 1 tablespoon salt
- 1 tablespoon brown sugar
- Wood chips hickory or applewood
- Water for brining
Brine the turkey in a solution of water and salt for at least 12 hours.
Remove the turkey from the brine and pat it dry with paper towels.
