- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 medium onion finely chopped
- 1 bell pepper diced
- 2 cloves garlic minced
- 1 can 14 oz diced tomatoes
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup frozen peas
- Olive oil for cooking
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and bell pepper; sauté until softened.
Stir in the minced garlic and cook for another minute.
Add the rice to the skillet and toast for 2-3 minutes, stirring frequently.
Pour in the diced tomatoes with their juice, followed by the vegetable broth.
Season with paprika, cumin, salt, and pepper; stir well.
Bring to a boil, then reduce the heat to low and cover.
Simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.
Add frozen peas and fluff the rice with a fork.
Serve warm, garnished with fresh herbs if desired.
