Ingredients
  

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 medium onion finely chopped
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can 14 oz diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Olive oil for cooking

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and bell pepper; sauté until softened.
  • Stir in the minced garlic and cook for another minute.
  • Add the rice to the skillet and toast for 2-3 minutes, stirring frequently.
  • Pour in the diced tomatoes with their juice, followed by the vegetable broth.
  • Season with paprika, cumin, salt, and pepper; stir well.
  • Bring to a boil, then reduce the heat to low and cover.
  • Simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.
  • Add frozen peas and fluff the rice with a fork.
  • Serve warm, garnished with fresh herbs if desired.
