- 1 cup cooked ground beef or turkey
- 1 cup shredded cheese cheddar or your choice
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh herbs for garnish optional
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes, then pierce them with a fork.
Bake the potatoes for 45 minutes, or until tender.
Let the potatoes cool slightly, then cut them in half lengthwise.
Scoop out the insides into a mixing bowl, leaving a thin layer inside the skins.
Add cooked ground beef, cheese, sour cream, green onions, garlic powder, salt, and pepper to the bowl.
Mix the filling until well combined.
Stuff the mixture back into the potato skins.
Top with additional cheese if desired.
Return the stuffed potatoes to the oven for 10-15 minutes until heated through and cheese is melted.
