Ingredients
  

  • 4 medium-sized potatoes
  • 1 cup cooked ground beef or turkey
  • 1 cup shredded cheese cheddar or your choice
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs for garnish optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes, then pierce them with a fork.
  • Bake the potatoes for 45 minutes, or until tender.
  • Let the potatoes cool slightly, then cut them in half lengthwise.
  • Scoop out the insides into a mixing bowl, leaving a thin layer inside the skins.
  • Add cooked ground beef, cheese, sour cream, green onions, garlic powder, salt, and pepper to the bowl.
  • Mix the filling until well combined.
  • Stuff the mixture back into the potato skins.
  • Top with additional cheese if desired.
  • Return the stuffed potatoes to the oven for 10-15 minutes until heated through and cheese is melted.
