- 1 lb ground beef or turkey
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 1 ½ cups cornmeal
- 1 cup milk
- 2 eggs
- 1 cup shredded cheese cheddar or Mexican blend
- Salt and pepper to taste
Preheat your oven to 350°F (175°C).
In a skillet, brown the ground meat over medium heat until fully cooked.
Add black beans, corn, salsa, chili powder, cumin, salt, and pepper to the skillet. Stir well.
Simmer the mixture for about 5 minutes, allowing the flavors to meld.
In a bowl, combine cornmeal, milk, eggs, and a pinch of salt to create the cornbread batter.
Grease a baking dish and spread half of the cornbread batter on the bottom.
Layer the meat and bean mixture evenly over the cornbread layer.
Pour the remaining cornbread batter over the top of the meat mixture.
Sprinkle shredded cheese evenly on top.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
