Ingredients
  

  • 1 lb ground beef or turkey
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 ½ cups cornmeal
  • 1 cup milk
  • 2 eggs
  • 1 cup shredded cheese cheddar or Mexican blend
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground meat over medium heat until fully cooked.
  • Add black beans, corn, salsa, chili powder, cumin, salt, and pepper to the skillet. Stir well.
  • Simmer the mixture for about 5 minutes, allowing the flavors to meld.
  • In a bowl, combine cornmeal, milk, eggs, and a pinch of salt to create the cornbread batter.
  • Grease a baking dish and spread half of the cornbread batter on the bottom.
  • Layer the meat and bean mixture evenly over the cornbread layer.
  • Pour the remaining cornbread batter over the top of the meat mixture.
  • Sprinkle shredded cheese evenly on top.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
