- 1/2 cup small tapioca pearls
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 large egg optional
- Chocolate chips for serving, optional
- Fresh fruit for serving, optional
Soak the tapioca pearls in cold water for about 30 minutes.
Drain the tapioca and set aside.
In a saucepan, combine the milk, sugar, and salt over medium heat.
Once the milk mixture is warm, add the soaked tapioca pearls.
Cook for about 15-20 minutes, stirring frequently until the pearls become translucent.
If using, whisk the egg in a separate bowl.
Temper the egg by adding a small amount of the hot pudding mixture to it, then stir back into the pudding.
Cook for another 5 minutes to thicken the pudding.
Remove from heat and stir in the vanilla extract.
Let it cool slightly before transferring to serving dishes.
