Ingredients
  

  • 1/2 cup small tapioca pearls
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg optional
  • Chocolate chips for serving, optional
  • Fresh fruit for serving, optional

Instructions
 

  • Soak the tapioca pearls in cold water for about 30 minutes.
  • Drain the tapioca and set aside.
  • In a saucepan, combine the milk, sugar, and salt over medium heat.
  • Once the milk mixture is warm, add the soaked tapioca pearls.
  • Cook for about 15-20 minutes, stirring frequently until the pearls become translucent.
  • If using, whisk the egg in a separate bowl.
  • Temper the egg by adding a small amount of the hot pudding mixture to it, then stir back into the pudding.
  • Cook for another 5 minutes to thicken the pudding.
  • Remove from heat and stir in the vanilla extract.
  • Let it cool slightly before transferring to serving dishes.
