Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 garlic cloves minced
  • 1 bell pepper diced
  • 2 medium potatoes cubed
  • 1 zucchini diced
  • 1 can diced tomatoes 14 oz
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh herbs thyme, parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, carrots, and celery. Sauté for 5 minutes until softened.
  • Stir in minced garlic and cook for an additional minute.
  • Add the bell pepper and potatoes, cooking for another 5 minutes.
  • Incorporate the zucchini and continue to sauté.
  • Pour in the diced tomatoes and vegetable broth, stirring well.
  • Bring the soup to a boil, then reduce heat to simmer.
  • Season with salt and pepper to taste.
  • Let it simmer for 20 minutes until vegetables are tender.
  • Garnish with fresh herbs before serving.
