- 1 onion diced
- 2 carrots diced
- 2 celery stalks diced
- 2 garlic cloves minced
- 1 bell pepper diced
- 2 medium potatoes cubed
- 1 zucchini diced
- 1 can diced tomatoes 14 oz
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh herbs thyme, parsley for garnish
Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, and celery. Sauté for 5 minutes until softened.
Stir in minced garlic and cook for an additional minute.
Add the bell pepper and potatoes, cooking for another 5 minutes.
Incorporate the zucchini and continue to sauté.
Pour in the diced tomatoes and vegetable broth, stirring well.
Bring the soup to a boil, then reduce heat to simmer.
Season with salt and pepper to taste.
Let it simmer for 20 minutes until vegetables are tender.
